More About Tea

Last week I blogged about the health benefits of drinking tea over coffee and shared with you an article by Dr. Andrew Weil MD.  This week I wanted to help educate you about the brewing process of tea.  Tea can be savored like fine wine or a tasty cup of coffee.  In China and Japan tea is the center of ceremonies and ritutals.  All tea comes from the same plant but the processing of the leaves is what creates the different taste.  White tea is the least processed of the teas and black tea is the most processed.  This is why the brewing process and the temperature of the water is so very important.  If you pour too hot of water on a white tea you will scorch the flavor of the tea.  If you brew and steep tea at the proper temperature and time the flavor will be heavenly.  My husband and I have become amateur tea connoisseurs.  We love to find new tea to try.  Sometimes we splurge and buy really expensive teas and save them for special occasions.  The aromas and complex taste of specialty tea is heavenly.

Over the years I have enjoyed trying all different types of tea.  I encourage you to start exploring into the depths of this ancient tradition.  When buying tea at first you may be a little shocked at the price per pound.  I have found that a little goes a long way.  I spend about $15 a month just for my morning cup.  Overall that is really not that much.  Plus the tea can be saved and throughout the day you can re-steep it over and over again.   I was taught that the 2nd and 3rd pourings taste the best if brewed properly.  I would have to agree with that statement.  My favorite morning cup is Rishi’s Jasmine Pearls.  I am completely impressed with how they packaged the tea to retain freshness.
